Pasta Scraps with Garlic, Pumpkin Seeds, and Fresh Sage

Ingredients
| 2 | cups | dried pasta scraps |
| 3 | Tbsp | olive oil |
| 4 | cloves | garlic, thinly sliced |
| 0.25 | cup | pumpkin seeds |
| 8 | leaves | fresh sage |
| salt and pepper to taste | ||
| parmesan, for serving |
Method
- Cook pasta scraps in well-salted boiling water until al dente. Reserve a cup of pasta water before draining.
- Heat olive oil in a large pan over medium heat. Add garlic and cook until golden, about 2 minutes.
- Add pumpkin seeds and sage leaves. Cook until sage is crispy and pumpkin seeds are toasted, about 2 minutes more.
- Add drained pasta and a splash of pasta water. Toss to coat, season with salt and pepper.
- Serve with grated parmesan.
