Pasta Scraps with Garlic, Pumpkin Seeds, and Fresh Sage

Ingredients

Scale:
2 cups dried pasta scraps
3 Tbsp olive oil
4 cloves garlic, thinly sliced
0.25 cup pumpkin seeds
8 leaves fresh sage
salt and pepper to taste
parmesan, for serving

Method

  1. Cook pasta scraps in well-salted boiling water until al dente. Reserve a cup of pasta water before draining.
  2. Heat olive oil in a large pan over medium heat. Add garlic and cook until golden, about 2 minutes.
  3. Add pumpkin seeds and sage leaves. Cook until sage is crispy and pumpkin seeds are toasted, about 2 minutes more.
  4. Add drained pasta and a splash of pasta water. Toss to coat, season with salt and pepper.
  5. Serve with grated parmesan.
